I too once thought that cauliflower bread sounded ridiculous and unappealing. Then I made my first cauliflower pizza crust 2 years ago and promptly changed my perspective. It’s simple and amazing! Instead of empty calorie, gum glue white bread crust, I had nutrient rich, low calorie healthy crust. It’s amazing. I opted to get more creative with cauliflower crust. A hankering for focaccia bread with some marinara or bruschetta lead me in the right direction.
Before you dig in, a disclosure: microwaving cauliflower will make your home smell… well, like someone has horrible gas. While the smell is gone, the second you bake the bread into its final product, there is this terrifying moment that you’ve just stink bombed your home. I recommend having a delicious smelling recipe going at the same time to offset it.
I used the same base of this recipe to create a gluten free alternative for everything bagels, called Brenna's Everything Bites and posted it to the Premier Pass. Less the 20% of the calories of a standard everything bagel and loaded with nutrition that support gains, weight loss, pain relief, migraine/headache prevention and even healthy skin. That, my friends, is a win!
