Gluten-free, Dairy-free Pumpkin Pie Bars

Makes 20 bars
For the crust:
1 2/3 Cups Pecans
1 Cup (~5 oz.) Pitted Dates (soaked in warm water first, especially hard/not moist)
2 TBS Water
¼ tsp Pure Vanilla Extract
2/3 Cup Rolled Oats (for GF, make sure to get certified Gluten-free oats)
2 TBS Ground Flax
For the filling
1 15 oz. Can Libby Pumpkin Purée
1 15 oz. Can Coconut Milk
½ Cup Madhava Coconut Sugar
1 tsp Cinnamon
½ tsp Ground Ginger
¼ tsp Ground Nutmeg
¼ tsp Ground Allspice &/or Cloves
1 TBS Sheila's Fall Spice Blend. More if you love it super spicy!
¼ tsp Salt

You'll want to start by lining a 9x13 pan with parchment. Do you have to? No, but it eliminates the need for extra oils and it will make cleaning up so much easier!!! Trust me, you'll be glad you did! You also want to get your oven heating up to 350•.
First up, let's make the crust!
It's really as easy as adding all the ingredients to your food processor. Pulse it just a few times to combine if you like it a little chunky, or even more if you like the texture a bit more fine. Next, dump it all at once into your prepared pan mad press down evenly with either just your hands, or you could use the bottom of a glass. Set it out of your way.
Time for the filling!
Same as you did with the crust, add all the filling ingredients to a mixing bowl. Whisk until smooth and pour into pan over prepared crust.
Time to bake!
Tap pan on the counter a few times to get any air bubbles up to the top. Start baking at half an hour, but it could take up to 45 minutes, ovens can be very different! You'll know it's done when you jiggle the pan and it's set on the sides and just a little wiggly (not watery!!!) in the center. Let it set about 15 minutes before digging in, but it will cut a little cleaner if you chill it until completely cooled. Use a sharp knife to cut into 20 Squares.
