2 to 3 Beets, chopped OR 2 - 15 oz cans of beets, which can save time
2 to 3 Potatoes, sliced into bite-sized pieces
4 TBS Healthy Cooking Oil (Olive, Grape Seed, etc.)
1 Onion, finely chopped
2 Carrots, chopped or grated
2 Celery Ribs, finely chopped
½ Head of Cabbage, thinly chopped (see picture)
1 15 oz. Can Kidney beans with their juice
¼ Cup Fresh Parsley
2 Dried Bay Leaves
6 Cups Water
4 Cups Organic Vegetable Broth
1 6 oz. Can Tomato paste
4 TBS Lemon Juice
¼ Tsp. Ground Black Pepper
1 TBS Dill Weed
1 Lucky Iron Fish
Serve with a dollop of sour cream or top with cheese. Enjoy with a friend on a chilly day.
