2016 has arrived, and like everyone else, I want this year to get off to a great start and be the best year ever! I love learning new food traditions and recipes from around the world. I love reading articles on different foods that people eat in different regions of the US, as well as globally.
I whipped up this delicious Fortune Soup. Greens are eaten in different cultures around the world on New Year's Day to represent money flowing in the new year. Different countries and regions eat different greens on this day, but symbolically it's to represent money. With our currency in the US becoming more and more colorful, as most countries' money has been for a long time, perhaps it's time to switch it up and add red cabbage, and rainbow chard.
Black eyed peas are consumed on New Year's Day for the same reason. These protein, nutrient rich beans (legumes) are said to represent coins. Legumes of all sorts and sizes are consumed on New Year's Day as a symbol of good luck bringing in wealth and prosperity to your life and home. Lentils are more commonly eaten around the globe, as they are flat disk shaped, more akin to coins. Those lentils really do have it all don't they.
For this fortune soup I added onions, because they're delicious, but they also fight off disease short term and long term. Here's to a healthy 2016. Additionally, I added carrots for glowing skin and supporting vision. May you clearly see the beauty of 2016. While the greens represent money, they also are great for detoxifying the body, while being rich sources of nutrients. May you let go the hurts and harms of 2015 and nourish yourself - mind, body and soul - in 2016.
1 TBS Olive Oil
½ Medium Onion, Chopped
1 Cup Cabbage, Finely Chopped
2 Cups Kale, Chopped
1 TBS Minced Garlic
2 Cups Carrots, Chopped

2 Cups Water or Low Sodium, Vegetable Broth
